Certified Organic Farming in Our Garden

When we planted our first seeds in the resort’s vegetable garden last year, it was about more than growing peppers, aubergines, onions, kale, and juicy tomatoes. It was about nurturing a different way of thinking—one that respects the rhythm of nature and the value of each leaf we harvest.

This winter, our head gardener, Tajana Vulević, took her commitment a step further by completing a course in organic vegetable farming, learning how to plan, cultivate, and care for crops following ecological principles that protect health, soil, and the environment. Tajana brings a strong foundation to this work, having completed secondary education in floral design, nursery gardening, and agricultural technology before earning her degree as an agricultural engineer from the Biotechnical Institute, where she specialised in Mediterranean plants and nursery management. From recognising pests and caring for the soil to knowing the perfect moment to harvest, sort, and store produce, Tajana’s knowledge and experience will guide us into a new chapter of our garden’s growth.

Our vegetable garden supports our farm-to-table philosophy, supplying fresh, seasonal ingredients for select dishes at our à la carte restaurants whenever possible. It also offers a place of learning and exploration, with children from the Kids Club visiting the garden each week to experience how food grows, taste herbs like mint, basil, and chamomile, and discover the joy of harvesting what they have planted.

Looking ahead, Tajana’s expertise will help us expand the garden with new crops and make use of additional unused plots around the resort. From hands-on guest experiences to quiet moments of discovery among the garden rows, we look forward to growing this project together, season after season.
